These homemade Thin Mints taste just like the real thing. Prep: Preheat your oven to 350 degrees Fahrenheit and line a cookie sheet (or several) with parchment paper. Set aside. Mix: In a medium sized bowl, mix up dry ingredients, then stir in the extracts, oil and water and mix until you get a ball of cookie dough.Preheat the oven to 350°F (177°C) and line 2 pans with parchment paper. Unwrap the dough and place another large piece of parchment paper over the dough and use a roller to roll the dough out into a large piece, ¼ inch thick. This size is important so that they bake up evenly and somewhat crispy.1/2 cup butter, room temperature. 1/3 cup milk (any kind) 1/2 tsp vanilla extract. 3/4 tsp peppermint extract. In a small bowl, whisk together flour, cornstarch, cocoa powder and salt. In a large bowl, cream together butter and sugar. With the mixer on low speed, add in the milk and the extracts. Mixture will look curdled.
